Caramelized Peach and Pecan Oatmeal

Vegan!

Ingredients
2 cups Peaches (peeled & sliced)
1/4 cup Pecans
1/4 cup Maple syrup
2 tablespoons Coconut oil
1 teaspoon Cinnamon
1/2 teaspoon Vanilla extract
1/8 teaspoon Salt
1 cup Oats
1 cup Almond milk

Step by Step Instructions
  1. Heat the coconut oil, maple syrup, cinnamon, and vanilla in a pot over medium heat, then add the sliced peaches.
  2. Cook the peaches and pecans in the mixture for 3 minutes, then flip them over to cook on the other side. Let cook for a bit longer, flipping them over twice.
  3. Mix the oats, salt, and almond milk in a separate pot and let them cook for 5 minutes over medium heat.
  4. Serve the oats topped with the caramelized peaches and pecans.
